Cilantro Dressing
About this Recipe
My friend Karen gave me a recipe she called Southwest Caesar Salad. This is my riff on that. I made it more cilantro-centric. It's my absolute favorite salad dressing, but I also love it as a marinade, and it's always a hit as a vegetable dip.
Ingredients
-
1 cup lemon juice
-
4 teaspoons minced garlic
-
1/4 cup Worcestershire sauce
-
1/2 cup brown sugar
-
2 cups mayonnaise
-
2 cups olive oil
-
1/2 medium onion
-
1 bunch cilantro
-
salt and pepper to taste
Instructions
-
Add everything to the blender and let it do all the work
Notes
-
This recipe started as a salad dressing, but we also use it as a marinade and as the base for vegetable dips. For a dip, mix it with cream cheese, Greek yogurt, or sour cream until you reach the flavor and consistency you like.
-
It keeps in the refrigerator for long periods
-
You can use a white onion or the equivalent in green onions
