Sweet Potato Pie

Pies were among the first things I ever learned to bake, and over the years they've become a tradition in our house. We also grew a lot of sweet potatoes because our dogs, Beckham and Piglet, ate a homemade diet. Somewhere along the way, Beckham decided the garden belonged to him. He'd harvest carrots for himself, snack on cauliflower, then proudly bring me the empty plant as if to say, "Plant another one." I'm pretty sure he knew those sweet potatoes were his. The photo above is Beckham inspecting one of his harvests. Thankfully, we always grew enough for both the dogs and the pies.
Ingredients

3 cups cooked and mashed sweet potatoes

1 cup butter, melted

3 cups granulated sugar

4 egg yolks

1/2 cup half-and-half

1/2 cup heavy whipping cream

1 teaspoon vanilla extract

1/4 teaspoon ground nutmeg

One 9-inch pie crust
Instructions

Preheat the oven to 400 degrees.

In a large bowl, combine the sweet potatoes and melted butter.

Stir in the sugar.

Beat in the egg yolks one at a time.

Stir in the half-and-half, whipping cream, and vanilla.

Pour into the pie shell.

Sprinkle the top with ground nutmeg.

Bake for 10 minutes at 400 degrees.

Reduce the oven temperature to 375 degrees and bake for 35 minutes more, or until a knife inserted in the center comes out clean.
Notes

I prefer baking sweet potatoes rather than boiling them. I think they have a richer flavor, and they're easy to bake while I'm making the pie crust or getting the rest of the ingredients together.

I usually bake extra sweet potatoes and freeze them in 3-cup portions so they're ready whenever I want to make a pie.

The filling freezes beautifully. I usually freeze it separately to save freezer space, but the baked pie freezes well too.

The combination of half-and-half and whipping cream makes this pie especially rich. If you don't have whipping cream, you can substitute additional half-and-half.

For a "Spiced Sweet Potato Pie" recipe that is a wonderfully different flavor. It's especially good served warm with a scoop of vanilla ice cream.
